Cannabis-Infused Mini Peanut Butter Cups

These mini peanut butter cups are a delicious, discrete treat that couldn’t be simpler to make, but before you get to dessert, you’ll need to prepare your cannabis butter, also known as cannabutter. You can check out our cannabutter Journal entry HERE .
Now it’s time for the sweets!

Preparation time: 20 minutes
Total time: 1 hour
Yield: ~24 peanut butter cups

  • Mini muffin tin(s)
  • 24 mini muffin liners

  • ¼ cup cannabutter
  • ¾ cup peanut butter (natural, or sweetened)
  • ¾ cup graham cracker crumbs*
  • ¼ cup of sugar
  • 1 cup chocolate chips (semi-sweet, or milk chocolate)
  • ¼ cup of milk or heavy cream
  • Pinch of sea salt

*Graham cracker crumbs can be purchased or made by crushing whole graham crackers. To make your own, place graham crackers in a plastic freezer bag, and crush lightly using a tenderizer, rolling pin, or even the bottom of a pot.

  1. Prepare mini muffin tins with liners. In a microwave-safe bowl, combine cannabutter and peanut butter and microwave until slightly melted, about 45 seconds. Add sugar and graham cracker crumbs and stir to combine.
  2. Using a spoon, or a small ice cream scoop, spoon approximately three teaspoons of the peanut butter mixture into each liner, and gently push down. If you have some left over, it can be reheated, and used later. Place trays in the fridge for at least 10 minutes to set.
  3. While filling cools, combine the chocolate chips and milk in a microwave-safe bowl. Microwave for 30 seconds at a time, stirring between each round to avoid burning the chocolate.
  4. When the ganache is smooth and mixed, remove the trays from the fridge, and spoon melted chocolate over each cup, covering all peanut butter. Sprinkle with sea salt while they are still warm and return to the fridge for at least 30 minutes. Once set, these can be stored in the fridge for up to two weeks. Enjoy!
  5. Remember that it can take between 30 and 90 minutes for you to feel the effects of ingested cannabis, and effects may be felt hours after consumption. The JWC family reminds you to use responsibly.

With any cannabis-infused edibles, the general rule is to start with a low amount, and only increase slowly. Here at JWC, we would like to remind you that determining your dosage should be based on the information provided to you on your medical document. Do not change your dosage without first consulting with your healthcare provider. As always, make sure that your edibles are properly labelled and are stored out of reach of children and pets.

When working with edible, cannabis-infused products, try to understand and maintain the ratios between the amount of cannabis and the butter or oil being infused. If your cannabis butter or oil is potent, consider reducing the amount used in your recipe by using a mix of infused and regular butter.
