Cannabis-Infused Peanut Butter Cookies

If you’re nuts about peanuts, you’ll be happy to find out that November is Peanut Butter Lovers’ Month! Peanuts, along with other nuts and legumes, were staple foods during the war effort as cheaper protein alternatives to meat.

This month’s family-friendly recipe offers two variations of the classic peanut butter cookie. Makes 12 cookies.

Optional: this recipe incorporates cannabutter for the cannabis-infused variation, however, to make this recipe family-friendly, just remove the 2 tablespoons of cannabutter and use regular unsalted butter instead. You can find our cannabutter recipe here.

Utensils:

  • Whisk & spatula
  • Baking sheet
  • Parchment paper
  • Mixing bowls
  • Measuring cups & spoons
  • 1-ounce portioning scoop
  • Wire cooling rack

Ingredients:

  • ¾ cup all-purpose flour (105g)
  • ¼ tsp salt
  • ½ tsp baking soda
  • ¾ cup packed dark brown sugar (150g)
  • ½ cup (130g) creamy peanut butter (note: do not substitute crunchy peanut butter)
  • 1 large egg
  • 2 tablespoons prepared cannabutter, melted and cooled
  • 1 tablespoon corn syrup (light or golden)
  • ½ tsp pure vanilla extract
  • ¼ cup unsalted, roasted peanuts, finely chopped

NOTE: For best results, use a kitchen scale to weigh the flour, sugar and peanut butter.

Instructions:

  1. Preheat oven to 350°F and adjust oven rack to middle position. Line baking sheet with parchment paper and set aside.
  2. Whisk together flour, salt, and baking soda in a medium bowl.
  3. In a large bowl, whisk sugar, peanut butter, egg, melted butter, corn syrup, and vanilla until smooth. Remove whisk, add flour mixture to bowl and fold gently with rubber spatula until combined. Fold in chopped peanuts until evenly distributed.
  4. Using a 1-ounce scoop, portion dough into 12 balls on parchment-lined baking sheet (2 tablespoons of dough per cookie). Using your fingers or a fork, gently flatten cookies.
  5. Bake cookies until edges are lightly browned, 10-12 minutes, rotating baking sheet after 5 minutes. Let cookies cool on sheet for 5 minutes, then carefully transfer to wire rack and allow to cool completely before serving.

65.625mg/Tablespoon x 2 ÷ 12 servings = 10.9 mg/ serving
