Super Bowl Queso Dip Recipe

You’ll be ready for Super Bowl kickoff with this game-day queso dip recipe. This cannabis-infused dip is easy to prepare and perfectly compliments your favourite foods for dipping.

Yield: 2 cups of queso, approximately 6 servings

Utensils:

  • Large skillet
  • Large saucepan
  • Whisk

Ingredients:

  • 1 tbsp prepared cannabutter
  • 1 tbsp butter
  • Olive oil
  • 1 small onion, chopped
  • 1 poblano pepper, diced with seeds removed
  • 1 jalapeño pepper, diced with seeds removed
  • 2 garlic cloves, minced
  • 2 tbsp all-purpose flour
  • ½ cup of half and half
  • ½ cup of sharp cheddar, grated*
  • ¼ cup of pepper jack cheese, grated*
  • ½ package of cream cheese, cubed
  • 1.7 -ounces canned, diced tomatoes, drained
  • 2 tsp lime juice
  • ½ tsp cumin
  • ½ tsp chili powder
  • Salt and pepper

*We do not recommend using pre-shredded cheese for this recipe.

Instructions:

  1. To get started, heat the skillet over medium heat and drizzle with olive oil. Add the onion, jalapeño and poblano pepper. Season with salt and pepper. Cook, stirring frequently, until vegetables have begunbegin to soften, about 5-8 minutes. Once they are cooked, remove the vegetables from the heat and set aside.
  2. In a saucepan, begin melting the butter and cannabutter over medium heat to make a roux. Once it is completely melted, slowly sprinkle the flour over the butter and whisk constantly. Cook for approximately 3-5 minutes, or until the roux mixture has turned slightly brown in colour. Slowly pour in the half and half, continually whisking to avoid lumps.
  3. Keep Continue whisking and allow the mixture to come to a very low simmer (you will see small bubbles around the edge of the saucepan) and reduce the heat to low.
  4. One handful at a time, add the shredded cheeses and stir until melted. Allow each addition to melt completely before adding more.
  5. Once the cheese has fully melted, add the cubed cream cheese and stir until smooth.
  6. Add the cooked peppers and onions, diced tomatoes, cumin and chili powder, and mix well, until fully incorporated.
  7. Transfer the mixture to a serving bowl, and serve with chips, or anything else you like for dipping. Enjoy!
